
Apple and Carrot Loaf

This Apple and Carrot Loaf combines the delightful flavors of grated carrots and apples, offering a light and fluffy texture that’s perfect as an afternoon treat. Enhanced with the warmth of cinnamon and the crunchiness of toasted pecans, this loaf makes for a deliciously comforting snack. The optional cream cheese frosting adds a creamy finish, but the loaf is just as enjoyable on its own. Ideal for breakfast, dessert, or tea time, it's a perfect way to use up any overripe produce.
Ingredients
- •100 g unsalted butter (at room temperature)
- •180 g brown sugar
- •30 g vegetable oil
- •2 eggs
- •120 ml milk
- •150 g peeled and grated carrots
- •150 g peeled and grated apples
- •50 g pecans (chopped and toasted)
- •1 tsp salt
- •2 tsp baking powder
- •280 g all-purpose flour
- •1.5 tsp ground cinnamon
- •100 g cream cheese (at room temperature)
- •3 tbsp icing sugar
- •1 tbsp cream or milk
- •40 g pecans (toasted and chopped)

Using a whisk or an electric mixer, beat the butter with the oil and sugar until creamy and clearer in color.

Add the eggs and beat until incorporated and thick.

Mix in the carrots, apples, pecans, and milk until they are combined.

Add the flour, cinnamon, baking powder, and salt, mixing just enough to combine.

Pour the batter into a prepared pan.

Bake in a preheated oven at 180°C/350°F for 45 minutes to 1 hour and 15 minutes.

Check the top for golden color at the 30-minute mark and switch to bottom heat if necessary.

Let the loaf cool completely before applying the optional frosting.
