
Cottage Cheese Egg Bites

These high-protein cottage cheese egg bites are a convenient and healthy breakfast option, perfect for meal prep. With a creamy texture and cheesy flavor, they provide a satisfying start to your day. Ingredients

- •8 large eggs
- •1 cup cottage cheese (4% or low-fat)
- •0.5 cup shredded sharp cheddar cheese
- •0.25 teaspoon fine salt
- •1 pinch black pepper
- •fresh chives (roughly chopped)

Mist the cups of a silicone muffin pan lightly with cooking spray.

Preheat oven to 350°F.

In a blender, blend together the eggs, cottage cheese, cheddar, salt, and pepper until smooth.
