
Italian Almond Ricotta Cookies

In a large bowl, beat the softened unsalted butter and granulated sugar on medium-high speed for 3-4 minutes until pale and fluffy.

Add whole milk ricotta cheese, egg, vanilla extract, and almond extract; beat on medium speed until smooth.

In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, and kosher salt.

Gently fold the dry ingredients into the wet ricotta mixture until just combined, stopping as soon as the flour disappears.

Cover the bowl tightly with plastic wrap and refrigerate the dough for at least 2 hours.
