
Mexican Picadillo: A Comforting Beef and Potato Dish in Tomato Sauce

Mexican Picadillo is a classic comfort food featuring ground beef and diced potatoes simmered in a flavorful tomato sauce. This dish is perfect for a quick weeknight dinner, as it comes together in just 30 minutes. Serve it warm in fresh flour tortillas or over cilantro lime rice for a satisfying meal. Ingredients
- •1 lb ground beef
- •0.5 cup onion (diced)
- •1 each green bell pepper (diced)
- •2 cups potato (peeled and diced)
- •4 cloves garlic (minced)
- •8 ounces tomato sauce
- •1.5 cups beef broth
- •1 tsp salt
- •0.25 tsp ground black pepper
- •1 tsp ground cumin
- •1 tsp ground coriander
- •1 each bay leaf

Heat a large skillet over medium heat, add ground beef.

Cook over medium heat while breaking up the meat until mostly browned, then drain grease and return to heat.

Add diced onion, green bell pepper, and potatoes.

Continue to cook until onion and peppers are softened.

Add garlic and cook for an additional 30 seconds.

Pour in tomato sauce and beef broth.
