Ingredients
- •300 g almonds (raw)
- •150 g sugar
- •75 ml water
- •0.5 tsp salt
Instructions
- 1
In a large pot, combine sugar, almonds, and water.
- 2
Cook them over medium heat, stirring constantly with a hard utensil such as a nylon or wooden spoon.
- 3
The water will boil, and as the sugar melts, it will form a sugar syrup.
- 4
Keep stirring constantly until the sugar starts to dry down and crystallize, coating the almonds.
- 5
Continue stirring until the sugar melts again and turns golden brown.
- 6
Once the almonds are completely shiny and coated in caramel, remove them from the pot.
- 7
Place the almonds onto a prepared baking sheet with a silicone mat or parchment paper.
- 8
Spread them out to help them unstick, trying to have the candied almonds in a single layer.
- 9
Let them cool down completely to room temperature.
- 10
Use your hands to separate any big lumps.
