
Cold Caprese Dip with Cherry Tomatoes and Fruit

This Cold Caprese Dip is a delightful and easy appetizer perfect for parties and gatherings. Featuring a creamy base made from yogurt and cream cheese, it is topped with juicy cherry tomatoes, fresh basil, and a hint of fruit, adding a unique twist. The richness of the dip is balanced with a drizzle of olive oil and balsamic glaze, making it a crowd-pleaser that elevates any snack spread. Serve it with pita chips, crusty bread, or crackers for a delicious starter.
Ingredients
- •100 ml balsamic vinegar
- •200 g cream cheese (at room temperature)
- •200 g Greek yoghurt
- •1 salt (to taste)
- •1 pepper (to taste)
- •10 cherry tomatoes (cut into quarters)
- •80 g cherries (or other fruits cut in similar size to tomatoes; can substitute with strawberries, raspberries or peaches)
- •10 fresh basil leaves (cut into small pieces)
- •2 tbsp olive oil
- •1 olive oil (for finishing)
- •pita chips (for serving)
- •bread (for serving)
- •crackers (for serving)
Instructions

Place the balsamic vinegar in a small saucepan and let it boil until it starts to look syrupy and can coat the back of a spoon.

Transfer the balsamic vinegar to a small bowl and let it cool down completely.

Whip the cream cheese and yoghurt until they come together and look creamy.

Add the salt and pepper to the cream cheese mixture and incorporate.

Mix all the toppings ingredients (cherry tomatoes, cherries, basil, olive oil) in a small bowl.

Spread the cream cheese and yoghurt mix onto the base of the serving dish.

Place the toppings over the dip.
