Ingredients
- •1.5 cups graham cracker crumbs (about 12 full sheets, crushed)
- •6 tablespoons unsalted butter (melted)
- •3 tablespoons granulated sugar
- •1 pinch salt (to balance sweetness)
- •16 ounces full-fat cream cheese (softened to room temperature)
- •0.5 cups powdered sugar (not granulated)
- •1 teaspoon vanilla extract
- •1 cup heavy cream (cold from the fridge)
- •0.5 cups fruit preserves (optional toppings, e.g. strawberry, raspberry, or blueberry)
- •0.25 cups crushed nuts (optional toppings, e.g. pecans, walnuts, or pistachios)
- •2 tablespoons melted chocolate (for drizzling)
- •null fresh berries (for garnish)
Instructions
- 1
In a medium bowl, combine the graham cracker crumbs, sugar, and salt. Stir in the melted butter until the mixture looks like wet sand.
- 2
Press about 1 tablespoon of the crust mixture firmly into each cup of a mini muffin tin. Freeze for 10 minutes.
- 3
In a large bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy.
- 4
Add the powdered sugar and vanilla extract to the cream cheese mixture and beat until fully combined.
- 5
In a separate chilled bowl, whip the heavy cream until stiff peaks form.
- 6
Fold one-third of the whipped cream into the cream cheese mixture, then gently fold in the remaining whipped cream until no white streaks remain.
- 7
Scoop the filling into a piping bag or zip-top bag and fill each muffin cup almost to the top.
- 8
Cover the muffin tin with plastic wrap and refrigerate for at least 4 hours or overnight.
- 9
Once chilled, gently run a knife around the edges to remove the bites, then add your desired toppings.
